But both countries produce coffees that are flavorful and innovative. These micro lots won’t last long, so we thought it would be a fun tasting experience to offer them as a set! SIRONKO STATION and FINCA NUEVE AGUAS
SIRONKO STATION in Uganda (Mountain Harvest’s central wet mill at the base of Mount Elgon) is redefining Ugandan coffee by applying controlled, centralized processing—rare in a region where home-based methods are the norm. Led by Ibrahim Kiganda and Ruth Chebet, the station processes cherries from remote mountain communities and trains Uganda’s youth in quality control, agri-finance, and regenerative agriculture, passing the baton from aging farmers to a new generation of professionals. This lot of coffee underwent the purest form of natural processing using only the ripest cherries, resulting in complex flavors like dark chocolate and tropical fruit. FINCA NUEVE AGUAS in Guatemala is named after the nine springs that spring from its soil, is located in the heart of the Cloud Forest, where they cultivate and harvest various agricultural and forestry products. The diversity of crops and activities allow them to counteract soil depletion while offering new agricultural products to meet demand. The topography and high elevation of Finca Nueve Aguas are peculiarities that promote the cultivation of speciality-grade coffees. Since it’s founding over 100 years ago, coffee production has continued and changed, meeting the demands and requirements of the market without neglecting the care of the environment and the integration of the inhabitants of the Panzal village. This experimental natural-process microlot is a shining example of an established farm continuing to innovate and evolve.
